    STORAGE ADVICE

    To ensure optimal freshness and quality, it is important to store the Beef Sirloin Joint properly. Place the bag of beef in the refrigerator at a temperature below 40°F (4°C). Ensure that the bag is tightly sealed or transfer the joint to an airtight container to prevent any contamination or exposure to air. Properly stored, the beef sirloin joint can be refrigerated for up to 3-5 days. If you need to store it for a longer period, you can freeze the beef. Wrap the joint tightly in plastic wrap and place it in a freezer-safe container or resealable plastic bag, removing as much air as possible. Frozen beef sirloin joint can maintain its quality for approximately 6-12 months.

To recycle the gel packs, simply cut a corner and dispose of the contents through your normal domestic waste system, as the gel isn’t harmful to the environment. Better still, reuse them by storing in the freezer and chilling other products. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.

    2. Season the beef sirloin joint with salt and pepper or your preferred seasonings. You can also marinate it overnight for extra flavor if desired.
    3. Heat a large skillet or frying pan over medium-high heat. Add a little oil and sear the beef joint on all sides until it develops a brown crust. This step helps seal in the juices.
    4. Transfer the seared beef sirloin joint to a roasting pan or a baking dish. Place it fat-side up if applicable.
    5. Insert a meat thermometer into the thickest part of the joint, ensuring it doesn’t touch the bone. This will help you monitor the internal temperature.
    6. Place the roasting pan or baking dish with the beef sirloin joint in the preheated oven.
    7. Cook the joint for about 15 minutes per pound (450 grams) for medium-rare, or adjust the cooking time according to your desired level of doneness. Here are some general guidelines:
    •Rare: 125°F (52°C) internal temperature
    •Medium-rare: 135°F (57°C) internal temperature
    •Medium: 145°F (63°C) internal temperature
    •Well done: 160°F (71°C) internal temperature
    8. While cooking, baste the joint occasionally with the juices in the pan to keep it moist.
    9. Once the beef sirloin joint reaches your desired internal temperature, remove it from the oven. Remember that the temperature will continue to rise a few degrees as it rests.
    10. Let the joint rest for 10-15 minutes before slicing. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
