We source local meat from farms in Wiltshire, Somerset and the South West, and make sure that we get the very best and most sustainable breeds for the season. If you choose to freeze your meat, make sure it is defrosted slowly and thoroughly before cooking. This is best achieved by leaving it in the fridge overnight. |
